Have you checked for NVIDIA driver updates, etc? That's the first thing I would check for in this case.
I am familiar with the NVIDIA CoProcManager ("Optimus" tech) and I've had to fix bugs with it and IS with other games (mostly WoW). It should "detect" the game just fine, as this software (CoProcManager) actually gets loaded from inside the game, when it starts up DirectX.
I'm not sure why it would be unable to detect the game exactly, but I assume from your description that you're using the application-specific setting to tell it to pick the NVIDIA GPU for EverQuest. It's possible that you have more than one EverQuest installation and only one of them is assigned? Worst case, try changing the Global setting instead of the Application-specific setting. I believe setting your Windows Power Profile to High Performance should also affect how this operates, so if your Power Profile is NOT set to High Performance, try that first.
You cannot pre-launch the game outside of Inner Space, you must launch it through Inner Space.
