I think my video card is the one that is capping because my CPU usage does not go above 50% and RAM does not go above 9Gb.

I have noticed there is no difference if instant swapping is disabled or not disabled. The lag and freezing starts at an equal number of wow windows open. After about 12 windows.

While a GTX 590 has 3GB of VRAM on the PCB, each GPU only has access to 1.5GB at any given time. You could easily be running out of VRAM, but follow the link that Lax provided to find out for yourself.
